These meatballs Ben's favorites ( so I think) Ben is my youngest grandson.



There is nothing special about the meatballs other when ready to eat are nice moist and tender you do not need a knife to cut them and will not bounce off the wall.

Let us start with the ingredient I use;

1 lb. organic grass-fed 85/15 ground beef

1 cup of bread chopped, soaked in milk, the milk is squeezed out, you may need up to 3 cups of fresh French or Italian bread to make one cup

1 garlic clove smashed with a little salt to make it easier to finely chop.

1 cup of finely pecorino cheese

1 or 2 fresh large egg you many need to use 2 eggs if you don't include the eggplant.

1/4 teaspoon of hot pepper flakes

1 good handful of chopped parsley.

Optionally, you can add the flesh of a roasted medium size eggplant. To roast eggplant, cut in two the long way, score the inside crosswise with knife and oven roast cut side down at 350 for about 20 minutes, once cooled scrape the flesh off the skin and finely chop to incorporate with the rest of the ingredients. 

Combine all ingredients together without over mixing. 

Divide into balls 1.5 to 2 inch diameter you may end up with 12 to 16 depending on the size. 

Place them on a sheet pan lined with parchment paper; bake them for about 10 to 15 minutes in a 350 degree preheated oven. If you plan to put them in tomato sauce meatballs do not have to be cooked all the way, a few minutes in the sauce will finish cooking them. 

 

Quick, simple and delicious tomato sauce.

1 can peeled Italian tomatoes 28 oz. 

1 medium garlic clove smashed and finely chopped with a little salt

1 tablespoon each chopped parsley and basil (Optional)

1/4 teaspoon or to taste hot pepper flakes

2-3 tablespoons extra virgin olive oil. 

2 teaspoons of salt

Making the sauce

Add all ingredients but salt and tomatoes into a low sides sauté pan, cook until garlic is aromatic, immediately add tomatoes (careful as it may splash), once the sauce begins to simmer crush tomatoes with a mash potatoes whip, salt to taste and turn off the eat. 

Keep in mind tomatoes is a fruit and it does not need to be cooked for more than a couple of minutes. 

Add prebaked meatballs cover the pan for a few minutes while you are finishing cooking the spaghetti or whatever. 

 

You will notice it does not take much time to prepare everything yourself and best of all you have almost total control of the quality of the ingredients you use.
