Simple Recipe, feeds 4 hungry foodies. 

Muffuletta. I used 1 lb. of pizza dough to make 1 round bread stuffed it and cut it into 4 sandwiches, 



Simple Recipe. 

One 10 inch or so diameter round Italian Bread 

1 pound white bean Hummus. If you can't find it anywhere, I will have a recipe for it soon. 

1 pound boned and skinned chicken breast sliced crosswise about 3/8 inch thick. (cooks faster) (get fresh good organic or local cage free chicken)

Flour, salt and pepper to season the flour unless your flour comes seasoned

1/2 pound small white mushroom rubbed clean and cut in 2

handful of pitted black olives preferably Calamata

1 16 once jar of marinated artichokes

1/2 dry good white wine

2 garlic cloves in big chunks

small jar of roasted red peppers sliced or chopped

3 slices of lemon

Good olive oil for frying

1/4 pound of sharp Italian provolone not too thinly sliced.

A bunch of fresh arugula, baby arugula okay if you have no other option.  

Putting it all together:

Season flour. Get frying hot, add oil as soon as the oil is ready start sauteing the chicken, throw the garlic in it to flavor the oil,  don't overcrowd the chicken do it in 2 batches and put it aside. 

Trow away most of the frying oil and and garlic chunks, add the mushroom pieces, after 1/2 a minute add the wine, after 1/2 a minute add the artichoke juice, add the cooked chicken, the olives, parsley, the artichokes, roasted peppers. Stir until all well combined and put aside. 

Pre-heat broiler. 

If you want less bread scoop out the inside of the bread, spread 1/2 of the white bean hummus on the bottom half of the bread and the other half on the top inside of the bread. 

Fill the bottom of the bread with the chicken and artichoke mixture, top it with sliced provolone, and put it under the broiler to melt the cheese. 

Take it out and add as much arugula you like and topped with the other half of the bread. 

Cut it in 4 for 4 portions or eat it yourself and tell everyone.
